½ bunch coriander leaves sea salt flakes and freshly-milled black pepper
1 bunch oregano leaves, chopped guacamole, sour cream, warm tortillas, grated cheddar cheese, sliced jalapeno chillies and hot sauce, to serve.
Slice the Ingham’s Fresh Chicken Breast Fillets into fine strips, then combine in a bowl with the white onion, capsicums, shallots, spices, half the lime juice and half the olive oil. Mix well, then set aside for 5 minutes to marinate.
Combine the tomatoes, red onion, chilli, garlic and coriander leaves in a bowl with the remaining lime juice and olive oil, then season with salt and pepper.
Set a ribbed griddle over a moderate-high heat and cook the chicken mixture for 5 minutes, until firm to touch, then season with salt and pepper and mix in the oregano leaves.
Serve the fajitas in a buffet style with the chicken still sizzling, with platters of ingredients laid out side by side for guests to mix and match.
