Preheat oven to 200C. Place the butter in a medium saucepan and set over a moderate heat to melt. Add the maple syrup, soy sauce, vinegar, spices and garlic, whisk well, then transfer to a large bowl.
Use a sharp pair of kitchen scissors to cut the chicken wings in half, then season generously with salt and pepper. Toss with the flour and set aside for 10 minutes. Shake off the excess flour, then toss in the maple mixture.
Arrange in a lined roasting pan and bake for 20 minutes turning from time to time, until firm to touch and glossy. Serve with chopped coriander leaves, lime wedges, sour cream and tortilla crisps.
