Korean-Style Gochujang Chicken Drumsticks

INGREDIENTS

  • 18 chicken drumsticks
  • 1 red onion, finely diced
  • 6 cloves garlic, minced
  • 6cm piece ginger, grated
  • 2 Tbsp soy sauce
  • 1 tsp sesame oil
  • ¼ cup Gochujang paste]
  • juice of 1 lemon
  • cooking oil spray
  • sliced green shallots, coriander leaves and rice, to serve


METHOD

  1. Use a sharp knife to slash the thick part of each drumstick. Combine the onion, garlic, ginger, soy sauce, sesame oil and Gochujang paste in a large bowl. Add the chicken, mix well, then cover and refrigerate for 2 hours to marinate.
  2. Spray the chicken with cooking oil, then arrange on a moderate barbecue and grill for 15-20 minutes, turning several times, until cooked through and lightly blackened. Scatter with green shallots and coriander, then serve with rice.
