Free Range Garlic Kiev with Prosciutto and Haloumi

INGREDIENTS

  • 1 pack Free Range Chicken Breast Garlic Kievs
  • 4 slices prosciutto
  • 8 cherry tomatoes on the vine
  • 2 slices haloumi cheese
  • 3 tbsp olive oil
  • ½ lemon, zest and juice
  • ¼b basil
  • sea salt and freshly ground pepper


METHOD

  1. Preheat oven to 180c
  2. Cook Kiev as per pack instructions
  3. Place tomatoes and prosciutto on a lined baking tray, drizzle tomatoes with a little olive oil, season with salt and pepper then place into the oven until tomatoes are blistered and just cooked and the prosciutto is crispy
  4. Heat a frying pan and add a little oil, gently fry the haloumi until golden on both sides
  5. Place tomatoes, haloumi and prosciutto on to plates, slice Kiev and add then grate the zest and squeeze the juice of the lemon over the top, drizzle with oil and garnish with basil leaves
