Free Range Chicken Nuggets with an Avo Mash
- 1 pack Free Range Chicken Breast Nuggets
- 1 avocado
- ½ red onion, finely diced
- ½ lime, zest and juice
- ½ bunch coriander, roughly chopped
- 1 chilli, deseeded and sliced
- 4 cherry tomato, dice
- sea salt and freshly ground pepper
- Cook nuggets as per pack instructions
- Cut avocado in half remove the stone and skin, place into a bowl and smash with a fork to a rough pulp
- Add onion, lime zest and juice, chilli, half of the coriander, season with salt and pepper then mix until well combined
- Smear avocado onto a serving plate and place nuggets on top, sprinkle with tomatoes and the remaining coriander
