INGREDIENTS:

  • 4 Ingham’s Ready to Eat Breast Schnitzel
  • 1 tablespoon olive oil
  • 20g butter
  • 2 green or red apples cored, sliced in rounds
  • 4 Ingham crumbed chicken breast schnitzels
  • 4 hamburger buns, split in half
  • 1/4 cup whole-egg mayonnaise
  • 2 tablespoons wholegrain mustard
  • ½ fennel bulb or 2 teaspoons of fennel seed slightly toasted
  • 2 green or red apples cored, sliced in rounds
  • 4 leaves of cos lettuce

METHOD:

  1. Preheat oven to 160°C.
  2. Cook apples and schnitzels, in a pan with oil and butter for 5 mins.
  3. Preheat grill or salamander on high heat. Toast cut sides of buns until light golden. Place bun bases on plates.
  4. In a processor blend mayo, mustard and fennel until fennel is smooth.
  5. Spread buns with mayonnaise. Top with lettuce. Cut schnitzels, if required, and place on lettuce. Top with roasted apple slices . Cover with bun tops. Serve with chips.
