Turkey Breast Steaks With Green Olives And Sicilian Herb Sauce

INGREDIENTS

  • 8 x Ingham’s Turkey Breast Steaks
  • 1 tsp celery salt
  • ½ cup extra virgin olive oil
  • 1 bunch parsley leaves
  • 1 bunch oregano leaves finely-grated
  • zest and diced flesh of 2 lemons
  • 4 cloves garlic, minced
  • 1 tsp capers, chopped
  • 1½ cups Sicilian green olive cheeks shaved fennel salad, to serve


METHOD

  1. Season the Ingham’s Turkey Breast Steaks with celery salt, then drizzle with 1 Tbsp extra virgin olive oil. Cook on a moderate grill for 10 minutes, turning several times, until just firm to touch.
  2. Meanwhile, combine the remaining olive oil in a small saucepan with the herbs, lemon zest and flesh, garlic and capers. Set over a moderate heat until just warm to touch. Arrange the turkey pieces on a plate, then top with the Sicilian herb sauce and serve with fennel salad.
