2 cups cooked Ingham’s turkey
3 large tortillas
1½ cups pizza sauce
1 cup pepperoni slices
½ cup mixed olives, halved
1 red onion, finely sliced
1 tsp chilli flakes
1½ cup mozzarella, torn into strips
½ bunch fresh basil leaves
1 Preheat oven to 200°C. Shred the turkey and set aside.
2 Use an 8cm biscuit cutter to cut 12 discs from the tortillas, then arrange on a baking tray and top with pizza sauce. Cover with turkey, pepperoni, olives, onion, chilli and mozzarella, then bake for 8-10 minutes, until the cheese is beginning to turn golden. Top with basil and serve.
