Easy Turkey Drumstick Goulash

INGREDIENTS

  • 2 Ingham’s Turkey drumsticks
  • sea salt flakes and freshly-milled black pepper
  • 2 Tbsp extra virgin olive oil
  • 2 white onion, finely sliced
  • 1 green capsicum, diced
  • 8 cloves garlic, minced
  • 2 Tbsp sweet paprika
  • 2L chicken stock
  • 150g sour cream
  • 1 Tbsp plain flour
  • mashed potatoes, chopped parsley and lemon wedges, to serve


METHOD

  1. Preheat oven to 150°C. Set a large oval-shaped pot over a moderate heat. Season the turkey drumsticks with salt and pepper then fry in olive oil for 5 minutes, until well browned. Add the onion, capsicum and garlic and cook for 5 more minutes.
  2. Mix in the paprika and stock, then bring to a simmer. Fit the lid then bake for 1½ hours, until very tender. Mix the sour cream and flour, whisk in, then simmer until thickened.
  3. Serve with mashed potatoes, chopped parsley and lemon wedges.
